La Rossa produce un terzo in meno di latte rispetto alla razza Frisona, ma possiede una maggiore resa nella caseificazione. In particolare nel latte di Vacche Rosse si riscontra una variante della Caseina, la proteina fondamentale del processo di trasformazione del latte in formaggio, che garantisce una migliore predisposizione del formaggio alla lunga stagionatura, con una conseguente migliore \u003cstrong\u003edigeribilità\u003c\/strong\u003e. Per questo il regolamento di produzione del Parmigiano Reggiano Vacche Rosse prevede che il prodotto possa essere commercializzato  esclusivamente dopo un\u003cstrong\u003e minimo 24 mesi di stagionatura\u003c\/strong\u003e, contro i 12 del Parmigiano Reggiano tradizionale. Il risultato è un formaggio che, nonostante la lunga stagionatura, mantiene un sapore dolce, delicato e persistente.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eRicco di calcio e aminoacidi essenziali, altamente digeribile e \u003cstrong\u003eprivo di lattosio\u003c\/strong\u003e, si distingue per le sue elevate proprietà nutrizionali.
